Ahead of Fat Tuesday 2021, Sweden’s most award-winning bar Tjoget has created two interpretations of the popular pastry semla in liquid form.
Here in Sweden we have been craving semla on Fat Tuesday since the beginning of the 20th century. It’s an incredibly popular pastry, traditionally only served during one week in February. However, times change and new interpretations of this masterpiece are created all the time. For example, semlor have been served as carbonara, wrap, smoothie, hot dog and the list goes on. And now Tjoget joins the craze.
– I remember that I made a cocktail with flavors inspired by semlan a few years ago. But this year we enter the debate with two of our own interpretations of everyone’s favorite pastry semlan, says Andreas Bergman.
The recipes are created by Tjoget’s bar team, led by Leo Lahti.
– Fat Tuesday Fizz is an interpretation of Ramos Gin Fizz, a drink created 150 years ago in New Orleans where they also celebrate Fat Tuesday as part of Mardi Gras, says Axel Söderström, bartender at Tjoget.
– We have had a number of dessert cocktails on the menu over the years. FIKA 1.0 was an interpretation of a favorite fika. Fettisdags-FIKA 1.0 is a continuation of that, and it will be fun to throw a cocktail into the semla debate, says Leo Lahti, head bartender at Tjoget .
The drinks will be served at Tjoget between February 11-16, but you can also enjoy them in the comfort of your own home by using the recipes found below:

Fat Tuesday Fizz
Ingredients
- 30 ml gin
- 20 ml Disaronno
- 40 ml heavy cream
- 20 ml egg white
- 20 ml lemon
- 20 ml marcona orgeat
- 2 dashes vanilla tincture
- 2 dashed cardamom bitters

Fettisdags-FIKA 1.0
Ingredients
Clarified gin / Disaronno mix
- 1 l water
- 0,5 dl tea leaves
- 1 l sugar
- 200 g cacao nibs
- 3 pcs vanilla beans
- 1 l gin
- 0,7 l Disaronno
- 150 g butter clarified
- 0,5 dl cardamom kernels crushed
- 1,24 l milk
- 0,5 l lemon juice freshly squeezed, important!
Instructions
Clarified gin / Disaronno mix
- Heat water in a pot, add tea leaves, cacao nibs and cardamom kernels. Scrape the seeds from the vanilla pods and put both seeds and pods into the pot. Simmer for ten minutes and strain. Add sugar and stir until it's dissolved.
- Add the gin, Disaronno and clarified butter.
- Squeeze the lemon juice and remove any pulp and seeds. Pour the milk into a bowl and add the lemon juice – the milk will curdle. Mix together with the other liquid.
- Slowly strain through scrim several times until the liquid is completely clear.
- Pour into a bottle and keep cool.
Fettisdags-FIKA 1.0
- Pour 60 ml of the clarified liquid into an ice-filled mixing glass and stir until ice cold. Strain into a Double Old Fashioned-glass with one large ice cube, top with a thick layer of lightly whipped cream and garnish with cardamom kernels.
